Poor Knights of Windsor with blackberry compote. Think dolled-up french toast, or grilled cheese with a twist. Apparently this dish was such a favorite with these people that it took on their name.
Who were the Poor Knights of Windsor? They have a long and interesting history. The Poor Knights were mounted warriors, impoverished by their service to the King or Queen -- so allowed to stay at Windsor Palace. They were fed and cared for, and in return were expected to do small chores on behalf of their royal patrons.
The knightly tradition was officially established by the 12th century...but going strong by the 10th century. That makes for centuries worth of Poor Knight potential.
Today, there are still Poor Knights -- but now they're retired military. They still stay at Windsor Palace; their responsibility is marching in parades and taking care of ceremonial functions.
The Brick loved these creamy guys for breakfast -- or a snack. So did I.
POOR KNIGHTS OF WINDSOR
1) For each person, you'll need two hot dog buns or large rolls -- or four slices of bread. (Small appetites will prefer one hot dog bun or two slices -- these are filling.)
2) Spread thickly with cream cheese, then push the slices together to 'sandwich.'
3) Dip in beaten egg.
4) Fry gently in butter. (Sprinkle with a bit of cinnamon or nutmeg, if you like)
5) Microwave a jar of blackberry jam until it's barely liquid -- about 30 seconds. (Blueberry, raspberry or any other jam also works.) Drizzle your Poor Knights, then serve while still warm, with whipped cream.
